Directions

  1. Cook the Cajun Salmon
    Rub salmon fillets with olive oil. Season generously with Cajun seasoning, paprika, and a pinch of salt. Heat a skillet over medium-high heat. Cook salmon 3–4 minutes per side until blackened on the outside and flaky inside. Squeeze fresh lemon juice over the top before serving.
  2. Make the Garlic Mashed Potatoes
    Place cubed potatoes in a pot of salted water and bring to a boil. Cook until tender, about 12–15 minutes. Drain and return to the pot. Mash with butter, minced garlic, milk or cream, salt, and pepper until creamy and fluffy.
  3. Prepare the Shrimp Veggie Medley
    Heat olive oil in a skillet over medium heat. Sauté garlic until fragrant, about 30 seconds. Add broccoli, carrots, and bell peppers; cook 3–5 minutes until tender-crisp. Add shrimp, season with salt and pepper, and cook 2–3 minutes until shrimp turn pink. Sprinkle with parsley if desired.
  4. Assemble the Plate
    Place a generous scoop of garlic mashed potatoes on each plate. Top with a Cajun salmon fillet and serve the shrimp veggie medley alongside.
