Directions
- Bring a large pot of salted water to a boil. Add the baby potatoes and cook for about 10–12 minutes, until just fork-tender.
- Add the corn pieces and sausage slices to the pot. Continue boiling for another 5 minutes so the flavors begin to mingle.
- Stir in 1 tablespoon Cajun seasoning, paprika, and black pepper. Add the shrimp and cook for 2–3 minutes, just until they turn pink and opaque. Be careful not to overcook.
- Drain everything carefully and transfer to a large serving tray or baking sheet. Scatter lemon slices over the top.
- In a separate saucepan, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant but not browned.
- Stir in lemon juice, hot sauce (if using), and the remaining Cajun seasoning. Let the sauce simmer gently for 1–2 minutes to deepen the flavor.
- Pour the warm garlic butter sauce generously over the shrimp, potatoes, corn, and sausage. Toss gently until everything is well coated and glossy.
- Sprinkle with fresh parsley and serve immediately while hot.
