- Boil the Eggs
Place eggs in a pot and cover with water. Bring to a gentle boil. Once boiling, cover, turn off heat, and let sit for 10–12 minutes. Transfer eggs to an ice bath, peel, and slice in half lengthwise. Carefully remove yolks and place in a bowl. - Make the Filling
Mash the yolks with mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, lemon juice, salt, and pepper until creamy. Adjust with a bit more mayo if needed for smoothness. Spoon or pipe the mixture back into the egg whites. - Cook the Shrimp & Sausage
Heat olive oil or butter in a small skillet over medium heat. Add sausage slices and cook until browned, about 1–2 minutes per side. Add shrimp, season with Cajun spice, and cook until pink and lightly caramelized, about 2 minutes per side. - Assemble the Deviled Eggs
Top each filled egg with one shrimp and a piece of sausage. Sprinkle a little extra Cajun seasoning or smoked paprika over the top. Garnish with chopped parsley or chives.
