Directions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch (23×33 cm) baking dish.
- Heat olive oil in a skillet over medium heat. Add the chopped onion and cook for 3–4 minutes until softened and translucent. Add the minced garlic, smoked paprika, chili powder if using, and a pinch of salt and pepper. Sauté for 1 minute until fragrant.
- Stir in the cream cheese until melted and smooth, then add the shredded cheese, chopped shrimp, crab meat, and fresh cilantro. Cook for 2–3 minutes, stirring gently, until the mixture is fully combined and creamy. Taste and adjust seasoning if necessary.
- Lay out a tortilla and spoon ½ cup of the seafood mixture along the center. Fold the sides over and roll tightly to enclose the filling. Repeat with remaining tortillas and filling.
- Place the rolls seam-side down in the prepared baking dish. Brush the tops with melted butter for a golden, crispy finish.
- Bake in the preheated oven for 15–20 minutes, until the tops are lightly golden and the filling is heated through.
- Remove from the oven and let cool for a few minutes before serving. Garnish with extra cilantro or a drizzle of queso sauce if desired.
