Directions
- Boil the Pasta
Cook spaghetti in salted water until al dente. Drain and set aside. - Cook the Shrimp
In a skillet, heat butter and 1 tbsp olive oil over medium heat. Season shrimp with Cajun seasoning. Cook 2–3 minutes per side until pink and just cooked through. Remove shrimp from the skillet and set aside. - Sauté the Vegetables
In the same pan, add remaining olive oil. Sauté onion, garlic, red and green bell peppers until tender, about 3–4 minutes. Stir in diced tomatoes. - Build the Creamy Sauce
Add Cajun seasoning, smoked paprika, and black pepper to the vegetables. Pour in chicken broth and heavy cream. Simmer for 5 minutes until the sauce slightly thickens and flavors meld. - Combine Pasta, Shrimp & Cheese
Add cooked pasta and shrimp to the skillet along with half the mozzarella. Toss gently to coat everything evenly in the creamy Cajun sauce. - Transfer to Baking Dish & Top
Grease a baking dish and transfer the pasta mixture. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top. - Bake
Bake at 375°F (190°C) for 20 minutes, or until bubbly and golden on top. - Serve & Garnish
Remove from oven and sprinkle with fresh parsley. Serve hot with garlic bread or a crisp green salad for a complete comfort meal.
