- Prepare the Shrimp Patties
- Take ⅔ of the shrimp and chop finely until almost paste-like. Chop the remaining ⅓ into small chunks for texture.
- In a bowl, mix chopped shrimp, garlic, lemon juice, mayonnaise, Dijon mustard, breadcrumbs, parsley, salt, and pepper.
- Form the mixture into firm patties.
- Cook the Patties
- Heat olive oil in a skillet over medium-high heat.
- Cook patties 3–4 minutes per side until golden and fully cooked. The outside should be crisp while the inside remains juicy.
- Make the Guacamole
- Mash the avocado in a bowl until smooth.
- Add lime juice, red onion, cilantro or parsley, salt, pepper, and chili flakes if desired. Mix until creamy.
- Toast the Buns
- Lightly toast the buns in the same pan or oven for extra flavor and crunch.
- Assemble the Burger
- Spread a generous layer of guacamole on the bottom bun.
- Add lettuce leaves and tomato slices.
- Place a warm shrimp patty on top.
- Add another spoonful of guacamole or a drizzle of spicy mayo.
- Close the bun and press gently. Serve immediately.
