Ingredients

For the seafood

  • 6 large sea scallops, patted dry
  • 1 cup (150 g) cooked lobster meat, chunks or claws

For the chowder base

  • 2 tbsp butter (28 g, divided)
  • 1 tbsp olive oil (15 ml)
  • 1 small onion, diced (70 g)
  • 2 garlic cloves, minced (6 g)
  • 2 cups Yukon gold potatoes, peeled and cubed (300 g)
  • 2 ½ cups seafood stock or chicken stock (600 ml)
  • 1 cup heavy cream (240 ml)
  • ½ cup whole milk (120 ml)
  • ½ tsp smoked paprika (1 g)
  • Salt & cracked black pepper, to taste

For garnish

  • Fresh parsley, chopped
