Directions
- Prep the Oven & Potatoes
Preheat oven to 200°C (400°F). Line a baking tray with parchment paper. Toss halved potatoes with olive oil, salt, and pepper, then spread them evenly on one side of the tray. - Make the Maple Mustard Glaze
In a small bowl, whisk together Dijon mustard, whole grain mustard, maple syrup, soy sauce, lemon juice, and minced garlic until smooth and well combined. - Prepare the Salmon
Place salmon fillets on the other side of the baking tray. Brush each fillet generously with the maple mustard glaze. Season lightly with salt and pepper. - Roast Salmon & Potatoes
Roast in the preheated oven for 12–15 minutes, or until salmon is cooked through and flakes easily with a fork, and potatoes are golden and crispy. - Optional Glaze Boost
For extra caramelized flavor, brush the salmon with additional glaze halfway through baking. - Serve & Garnish
Drizzle any remaining glaze over the salmon, sprinkle with fresh parsley, and serve immediately alongside the crispy roasted potatoes.
