For the pasta & shrimp
- 1 lb (450 g) shrimp, peeled & deveined
- 12 oz (340 g) spaghetti or thin pasta
- 2 tbsp (28 g) butter
- 2 tbsp (30 ml) olive oil
- 4 cloves garlic, minced (12 g)
- 1 red bell pepper, diced (120 g)
- 1 green bell pepper, diced (120 g)
- 1 small onion, finely chopped (70 g)
- 1 can (14 oz / 400 g) diced tomatoes, drained, or 2 fresh tomatoes, chopped
- 2 tsp Cajun seasoning (or more to taste)
- ½ tsp smoked paprika
- ½ tsp black pepper
For the creamy sauce & cheese
- 1 cup (240 ml) heavy cream
- 1 cup (240 ml) chicken broth or seafood stock
- 1 ½ cups (150 g) shredded mozzarella cheese
- ½ cup (50 g) grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
